Make a Delicious Kare Kare Dish Using Oxtail

Kare Kare is a popular Filipino dish that’s known for its thick and flavorful peanut sauce. It’s traditionally made with oxtail, but you can also use beef tripe, beef shank, or pork hocks. In this article, we’ll guide you through the steps to make a delicious kare kare dish using oxtail.

Ingredients:

  • 2 lbs of oxtail, cut into 2-inch pieces
  • 1 cup of peanut butter
  • 2-3 cups of water or beef broth
  • 1 large onion, diced
  • 4-5 cloves of garlic, minced
  • 1 eggplant, cut into chunks
  • 1 bundle of bok choy or pechay, cut into bite-sized pieces
  • 1/2 cup of annatto seeds, soaked in 1/2 cup of water
  • 2-3 tablespoons of cooking oil
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, boil the oxtail in water for about 10-15 minutes or until scum rises to the top. Drain the water and rinse the oxtail with cold water.
  2. In the same pot or Dutch oven, sauté the diced onion and minced garlic until fragrant.
  3. Add the oxtail back into the pot or Dutch oven and pour in the water or beef broth. Bring everything to a boil and then lower the heat and let it simmer for about 2-3 hours or until the oxtail is tender.
  4. Once the oxtail is tender, remove it from the pot or Dutch oven and set it aside on a plate.
  5. In a separate pan, sauté the soaked annatto seeds in cooking oil until the color is extracted. Discard the annatto seeds and set the oil aside.
  6. In the same pot or Dutch oven, mix in the peanut butter and the annatto oil. Stir everything together until the peanut butter is well-combined with the liquid.
  7. Add the cooked oxtail back into the pot or Dutch oven and mix everything together. Add salt and pepper to taste.
  8. Add the eggplant and bok choy or pechay into the pot or Dutch oven and let everything simmer for another 10-15 minutes or until the vegetables are cooked through.
  9. Serve the kare kare hot over steamed rice.
